Summertime has its own energy. It's a backyard-kickball, popsicles-in-the-shade kind of energy.
It's not the kind of energy that sends you to the couch, looking for new family recipes.
And that's OK. Because family recipes are what I do for you. And I love it. :)
Here's one you can make today: Poolside Pasta Salad. It's fresh, colorful, make-ahead, and portable. I use whole grain pasta for fiber and B-vitamins, tons of fresh vegetables for vitamin C and antioxidants, and a homemade vinaigrette rich in healthy fats.

Now to the recipe:
For the salad:
- 1 pound whole wheat rotini or macaroni noodles
- ½ English cucumber, diced
- 3 carrots, peeled and diced
- 1 red bell pepper, diced
- ½ purple onion, diced
- 3 stalks celery, diced
- ½ cup Parmesan cheese (from a jar)
For the vinaigrette:
- ½ cup white balsamic or rice vinegar
- ¼ teaspoon salt
- ¼ teaspoon onion powder
- ¼ teaspoon dried basil
- ½ teaspoon dried oregano
- 1 small clove garlic, pressed
- 1 tablespoon honey
- ¾ cup extra virgin olive oi
Directions:
- Cook pasta according to the package directions. Drain and rinse in cool water to remove excess starch. Set aside.
- Combine all vinaigrette ingredients in a jar and shake well.
- Toss cooled pasta with veggies and vinaigrette until well mixed.
- Fold in Parmesan cheese. Serve immediately, or refrigerate up to four days.
