I don't know about you, but it's hard enough cooking a quick meal from scratch at end of a busy day, but planning a menu with seasonal produce can seem more like a "goal" than a "reality" most nights.

That's why I've created and keep coming back to some simple but delicious options for healthy easy veggie dishes that are super basic, but delicious and kid tested!  So I wanted to share them with you, too.
Here are some of my most popular veggie side dishes:
Simple Roasted Parsnips: if you have never tried parsnips, you are in for a treat. They are sweet and delicious! 
Easy Broccoli with Garlic and Lemon: this is my 12 year old's favorite way to eat veggies. It's a great 10 minute recipe to have in your back pocket. 
Simple Sautéd Swiss Chard: If you love Swiss Chard, or even if you're new to cooking with it, you will fall head over heels for this Simple Sautéed Swiss Chard Recipe. It is so easy to prepare, and only 80 calories per serving.
Brussels Sprouts with Garlic and Butter: They are steamed and then tossed with garlic butter and olive oil. It's about as basic (and fast) as you can get but so incredibly delicious! They're ready in 8 minutes flat!
