It's been way too hot around here! Here are some cold noodle soup recipes which are perfect for hot summer days.

Mul Naengmyeon (Cold Noodles in Broth) 

Although this dish was traditionally a winter dish, mul naengmyeon is highly popular in Korea in the summertime. The noodles are served in a clear, refreshing broth that's typically made with beef broth and/or dongchimi (radish water kimchi) broth. You can make quick dongchimi a few days ahead of time or purchase dongchimi sold in the kimchi section of Korean markets. Or simply use beef broth.

Kongguksu (Chilled Soy Milk Noodle Soup)

The refreshing savory soy milk is the star of this dish. Making soy milk is less work than you might imagine. Soaked soybeans are cooked, then pureed and filtered through a sieve. Totally worth the effort!

Chogyetang (Chilled Chicken Soup)

Chogyetang is a chilled chicken soup that is tangy and refreshing and served with shredded chicken and vegetables. This soup is excellent on its own, but you can serve it with some noodles, making it more substantial as a main meal. Buckwheat noodles are most common for this dish.
