What's your favorite summer vegetable? It's hard for me to choose one, but I have to say cucumbers are high on the list! Crunchy, juicy, mild, and refreshing - they brighten up any meal and are really the perfect vegetable for summer cooking. Cucumbers are a wonderful garnish for noodle dishes, a great addition to any salad or veggie tray, and delicious in many Korean side dishes. Here are some of popular cucumber dishes you can try this summer!

This is probably one of the easiest kimchi recipes you can make. I like to use Korean cucumbers, but any thin-skinned variety with small seeds such as Kirby, Persian, Japanese, or English cucumbers works great as well!

What are Korean cucumbers and what can I use as a substitute if I can't find them?

Korean cucumbers are long and slender, with thin whitish/pale green skin. They are crisp, crunchy and less seedy than most other cucumbers. Korean cucumbers are usually available at Korean markets in the summertime, but if you can't find them, Kirby cucumbers are a good substitute.
