If you are an Italian food lover like me, then you likely know that Italian food is so much more than just pizza and pasta bolognese. One of those Italian inspired dishes I fell in love with is marinara covered and baked Stuffed Shells. It is another hit from The Friendly Vegan Cookbook.
Pro tip: My pressure cooker is by far the most used kitchen appliance. In fact, I have several of them! I can whip up wholesome meals quickly, cook dried beans and brown rice in less than half the time, and it's so perfect for soups, chilis, and curries! I definitely vouch for the Instant Pot.
