Well, hello hello, and welcome to August.

Most things of importance are like that: a gift at times, a burden at others.
Like a backyard garden! 🌱 My husband planted lots and lots of tomato plants, a few zucchini, and plenty of cucumbers.
Oddly, the zucchini have been relatively quiet. They're usually so demanding, which is why we have so many zucchini recipes on the blog!
If you're producing tons of tomatoes 🍅, though, you'll be looking for our gf tomato tart.
For cucumbers 🥒, peel and chop or slice them into a big bowl. Add a pinch of coarse salt, a mild white vinegar, and some red onion slices. Toss and let them marinate in the refrigerator for at least an hour, then remove the onions and serve. *chefskiss*
Oh, and here's what happened on the blog this past week 😂:
First, smoothies are nice, but there's nothing better to do with perfectly ripe bananas any month of the year than make banana bread. And this is the simplest and best recipe out there.
Then, gluten free carrot muffins that look and taste like they just came out of your favorite bakery. The little sprinkle of brown sugar on top is key!

You must have a recipe like this in your toolbox. I put it in the same category as chocolate chip cookies, vanilla cake, and blueberry muffins: classic must-haves.
You know how the crumbs from a truly moist banana bread can be picked up with the back of a fork? This is that banana bread.

You know that big, bold dome that on top that bakery muffins have? These carrot muffins are like that, with tiny crumbs of brown sugar baked on top for extra flavor and sweetness.
Once you see how easy the batter is to make in just one mixing bowl, you'll make this recipe again and again.
They're not quite carrot cupcakes (more dense and less sweet than cake)—but they're definitely no ordinary muffin!
