I love to try to incorporate vegetables into every meal of the day if possible. They're flavorful, filling, and so good for you.
But...that "flavorful" descriptor can be more or less accurate, depending on how you prepare them, right? My 7-year-old son can eat a whole can of canned green beans on his own...but umm...I think we can do better.
Roasting vegetables brings out SO much additional flavor and gives you so many more options.
Here's a list of some of my favorites:
- Roasted Green Beans with Basil and Parmesan

- Roasted Radishes (COMPLETELY transforms their flavor!)
- Roasted Cauliflower with Chili Powder
- Roasted Parmesan Broccoli
- Roasted Whole Carrots (these are so elegant!)
- Roasted Brussels Sprouts with Asiago
- Whole Roasted Cauliflower with Creamy Dijon Sauce
- Roasted Carrots with Cumin Seeds
- Roasted Mushrooms with Balsamic, Thyme and Dijon
- Spicy Sweet Roasted Butternut Squash
- Roasted Brussels Sprouts with Maple & Cayenne
- Balsamic Roasted Vegetables

PS: If you forced me to choose a favorite, it would probably be the spicy sweet butternut squash.
