The very best (gf) vanilla cake & a 20-minute rice side (or main!)

From Nicole at GFOAS. Great gluten free recipes that really work.

Hey e,

This week, we fostered a dog. 🦮 We bathed him until he sparkled, loved him until he was relaxed, playful, and hungry, and marveled at how he chewed every single piece of dog food, one by one by one.

In between, I chased him down the street, flagging every car along the way when he got loose the moment I handed the leash to someone else.

PSA: If you ever see a dog on the loose, it's so appreciated if you are willing to stop and try to help. And to the young soccer player who outran me and then outran him, you're a hero!

Then, I tried to explain myself to my husband and daughter who wanted to keep him. He's from Puerto Rico. We'll never know if he was a surrender or a lost dog, but we do know that he'll be loved from this day forward, all the days of his life.

If you're a fan of Halloween, I hope you enjoy the living daylights out of it. May it be lighthearted and free of teenage heartbreak!

If you're not, at least we'll always have cake...

This past week on the blog, we started with just the perfect gf vanilla cake that is so light and airy, it proves, once and for all, that gluten free baked goods can be just as good, if not better, than conventional gluten cakes.

I get emails like "this really is the best!" That's only because, well, it is.

Then, prepare this yummy homemade gluten free Rice A Roni recipe from scratch in just 20 minutes.

I always make the dry seasoning ahead of time, then add the raw rice and broken pasta, and make it in one pot. A satisfying dinner the whole family will love is only minutes away, any day.

It may be bold to say, but this cake isn't just the best gluten free vanilla cake. It's the cake that you serve to people who can eat as much gluten as they want, and they ask if they can make it at home with their conventional flour. (They can't.)

The secrets to success in this recipe are the balance of ingredients at the proper temperature—and in the method. Your inspiration? That crumb!!

Read the recipe through carefully first, follow it closely, and you'll know you can make a GF vanilla cake with an open crumb and tons of delicate flavor any time!

Whether you're a last minute dinner rustler like I am or a planner with a schedule, you know the value of a really good homemade dinner that everyone loves—and comes together in mere minutes.

This GF Rice a Roni style dinner ticks all the boxes. It's super easy, uses regular pantry ingredients, can be made in stages, can be built up with protein or left plain, and everyone in my family loves it.

You can cook chicken in the same skillet (the recipe explains how), try adding crispy chicken nuggets to the top, or even serve it with some scrambled eggs. It's perfect plain, too. Dinner is served!

On Gluten Free on a Shoestring, we make gluten-free food enjoyable & affordable. If they can make it with gluten, we can make it without.
That's a promise!
