| A Slow Season Start
Living in Colorado, ski season is important. It's important for tourism, it's important because it means we are getting enough snow, and it's just plain fun. This year, we dove into ski season full-force and got new gear plus gear for the kids and decided to really get on the slopes. But, looking out my window in Denver now, it's 65˚F and we haven't received a single snowfall in the city. So.... maybe ski season will be delayed this year. Maybe this is the new normal, unfortunately. I miss snow! HAPPY DECEMBER! LET'S COOK!  Kabocha Squash Pasta Sauce This pasta sauce recipe is an entirely different beast and something that will completely change up your pasta game. You can use a wide variety of squash, but I use Kabocha Squash. Acorn squash is a good substitute if you can't find it.  Peppermint Meringues Dipped in Chocolate I'm not much of a baker, but these are just fun. They are great practice for meringues and are pretty flexible. Just beat the heck out of some egg whites and then pipe them on a baking sheet with some peppermint flakes. So fun and a great addition to holiday cookie plates!  Baked Goat Cheese with Bacon and Dates If you need a warm holiday appetizer (or game day appetizer) this goat cheese dip is wonderful. I top mine with crispy bacon and a quick date jam, but topping options are MANY. Dig in. Happy weekend everybody! __________________________________________________________ |
