Happy new year! 🎉 I hope your celebration — whether it was cheer-sing friends and family at midnight 🥂 or watching the back side of your eyelids 😴 — was exactly what you wanted it to be.
If eating a healthier lunch is a goal of yours this year, I want to share a recipe that's not only filling, fresh and delicious, but easy to make then portion out for grab-and-go lunches all week long.
You don't even need to reheat it!
Low Carb Greek Chicken Bowls combine a ton of fresh vegetables with marinated chicken and a dollop of store bought Tzatziki sauce in one HUGE and fabulous lunch. It is SO good, and SO convenient to have a pre-made meal at lunch time.
Make eating healthy easy on yourself and it WILL be!
Here are a couple of adaptation ideas:
- Swap the chicken for canned chickpeas to keep this meal meatless.
- Choose vegan feta or omit, and canned chickpeas instead of chicken, to make this meal vegan.
- Use store-bought Greek salad dressing to get this dish made even faster (though I love my easy homemade dressing!)
