We had a whopper of a Nor'easter this weekend, and we're slowly digging ourselves out. Luckily, the roads were largely empty, being a Saturday.
Plus, it was so, so beautiful. One of the many, many times I have wished I had finally learned to draw like I long to learn. For fun! Without trying to make myself into a professional of sorts...
I'm also grateful that the trees are bare, so fewer power outages. Two things my children know I don't handle with any maturity at all: stepping in dog poop (throw those shoes away!) and power outages (to be fair, our last one lasted 9 days!).
This past week on the blog, we made super soft, lightly sweet gluten free Hawaiian rolls that are highly enriched, impossibly tender rolls with the most tender crumb.
Use them as sandwich rolls, or just enjoy a toasted roll with butter.
Plus, a gluten free muffins recipe that's naturally egg-free and dairy-free without sacrificing that tender, moist crumb and beautiful bakery-style muffin dome we all love.
Add mix-ins and more flavors, or enjoy these quick and easy muffins as they are!

I simply love the soft, tender crumb of these rolls, and the way the outside browns just right (but stays soft!). The dough can be handled more like "regular" bread dough. You might just think you'd reached for wheat flour!
I've long made gf Hawaiian rolls with our gluten free bread flour blend from GFOAS Bakes Bread, but now I've developed a way to make them with a simpler all purpose gluten free flour blend. And that means you can even make this recipe dairy-free.
Lightly sweet, tender and pillow-soft, these Hawaiian rolls smell and taste like heaven!
