As I write this, I'm listening to my 18-year-old college-bound son and my 16-year-old daughter, who so often seem at each other's throats, bicker in that fun way that I do with my own beloved older brother.
The world is upside down, I'm consuming the news with heartbreak and empathy, but I'm also allowing myself this moment. My children do, indeed, know how to enjoy each other's company.
This past week on the blog, we baked with winter apples, and early spring strawberries.
Baking with fruit concentrates the flavors, so even if your apples aren't perfect and your strawberries aren't deep red, we're going to put them to their highest and best use!
We start with the classic light, flaky and creamy strawberry dessert that everyone loves, gf strawberry shortcake.
Make the strawberry-studded biscuits ahead of time and be ready to serve in minutes.
Finally, enjoy the flavors and smells of rich, warm spices with our sweet and spicy gluten free apple bread recipe.
The secret ingredient is apple butter, which is so easy to make with whatever late winter apples you have hanging around...
Before I begin the day's baking, I must bring our 10-week-old puppy out and beg her to pee ... outside. C'mon, Willow. Find a spot!

Bursting with fresh strawberry flavor, these light and flaky shortcakes are more than just a simple biscuit with berries and cream. (Not that there's anything wrong with biscuits, berries, and cream!)
These special biscuits have a touch of sugar in the dough, but the real surprise is that there are fresh chopped strawberries folded right into the raw biscuit dough.
You can make them as drop biscuits, or cut out rounds. Either way, don't skimp on the berries and fresh whipped cream in the center. Spring is coming!

There's nothing like the smell of apples and cinnamon baking in the oven, especially as winter seems to be hanging on.
If you're planning to spend some time at home this weekend, make up a big batch of apple butter by cooking up whatever apples you have on hand with a touch of maple syrup and some spices.
Then, bake some into this moist, tender and fragrant loaf of gf apple quickbread with plenty of nubby, sweet crumble topping. Leave it out on the counter, and watch it disappear!
