Meyer Lemon Bars with Toasted Meringue!

 

Meyer Lemon Bars with Toasted Meringue! The best parts of lemon meringue pie, made into bars with a graham cracker crust. This recipe uses a whole meyer lemon to enhance the citrus flavor. The light and fluffy meringue is toasted like a marshmallow and takes the squares to the next level.

Makes an 8x8 pan of bars, which I find to be the perfect amount.
