Garden Spring One thing I completely failed at last summer, as we moved back into our renovated house, was getting our garden going. We were finishing a million house projects and I just couldn't wrap my head around the outside stuff. All that will change this spring! I'm so excited to get our small city gardens up and running and grow some beautiful flowers and produce. We can never really grow a ton of stuff just because of space, but having fresh herbs and flowers is always nice. Hope you have some fun garden projects planned for the spring! Okay. Let's cook! Spring Tortellini Soup This time of year isn't usually when you are thinking about soup, but this spring tortellini soup is a nice bridge from winter to spring. Filled with spring greens, it's light and healthy! I use store-bought tortellini to make it easier. Easy Breakfast Tortilla This breakfast tortilla is based on a fun street food hack (I saw it on Tiktok I think first). You basically start your egg and veggies and then place your tortilla on top. The tortilla sticks to the eggs and then you flip the whole thing. Fairly easy to do and a wonderful breakfast! Avocado Butter Spread This is a fun switch from your standard avocado toast! Compound butter is fast to make and very flavorful. Use it on toast or muffins or just sneak a bit with a spoon. Happy weekend everybody! Quick Video: I made a quick video showing how I make curried chickpea sandwiches! Check out the video I made and give me a follow over there if you are a 'Tokker. __________________________________________________________
