Happy Saturday, friends!
We've had flurries, thunderstorms and temps ranging from the 20s to the 70s! That's spring in Indiana. It was definitely a week for comfort food. But I also shared some berry recipes to remind us that spring has arrived.
I'm looking forward to the farmers' market opening so I can get my fix of fresh sweet corn, peaches and local strawberries, but that's still weeks away. The countdown is on. Wishing you all a terrific week ahead.
SEASONAL FAVORITES - Here are some tasty recipes to celebrate spring.
Mascarpone Cheesecake Stuffed Strawberries - These are perfect on a dessert buffet! You'll feel virtuous eating these gems instead of a brownie!!!
Classic Strawberry Shortcake - When beautiful, fragrant strawberries start appearing in the markets, try making flaky homemade biscuits and topping them with ripe berries and cream.
Chocolate Meringue Cookies - Melt in your mouth cocoa meringues chock full of chocolate chips! This recipe is ideal for those times you have leftover egg whites from making pudding or creme brulee.
ON THE BLOG THIS WEEK:
Marbled Flourless Chocolate Cake - This dense chocolate cake with a swirl of vanilla cream cheese batter makes for an elegant dessert!
Easy Pork Dijonnaise - A twist on the classic chicken recipe (or did the pork version come first????)! Pork chops are topped with a creamy Dijon mustard sauce!
Potato Bread - Soft, fluffy bread that's great for sandwiches and toasts wonderfully for breakfast! Adding mashed potatoes to the dough works some tasty magic.
Happy Baking,
XOXO, Liz, That Skinny Chick Can Bake
