April is wrapping up and both Mother's Day and Cinco de Mayo are on the horizon. My Easy Chiles Rellenos Casserole (link below) is on the blog today and would be a fun meatless meal to add to your menu next week. I'd recommend a batch of Guacamole, too.

Cookie Dough Billionaire Bars - These are crazy rich and gooey! They start with a brownie base, followed by caramel, cookie dough and a chocolate glaze.
Easy Chiles Rellenos Casserole - A meatless, Tex-Mex dish that can be eaten any time of day!

Strawberry Fool - A retro dessert that's basically fresh strawberries and cream. Easy to make and a lovely spring and summer dessert.
Mediterranean Chopped Salad - Do you love a chopped salad as much as I do? So many options and this one is loaded with healthy veggies, cheese, plus olives, and topped with a yummy vinaigrette with lemon, Dijon and honey. You can definitely shake it up with your favorite salad ingredients.
Heath Bar Blondies - Made with nutty brown butter and chock full of Heath bars chunks and chocolate, toffee lovers will go crazy for these decadent bar cookies.
