April is HERE and I'm crossing my fingers that it's *finally* going to warm up around here. Abra and I ran around Chicago this week creating the next guide for our Chicago Series. You won't taste it at all (AKA perfect for kiddos). Naturally sweetened, gluten free, and so delish. .  Lunch: Famous Crunchy Cashew Thai-Inspired Quinoa Salad If you've been following AK for a while, there's a good chance you've had this famous quinoa salad. It's loaded with crunchy veggies and tossed with the BEST peanut ginger dressing. Perfect for meal prep!  Snack: Vitamin C Packed Strawberry Orange Banana Smoothie Smoothies aren't just for breakfast anymore, kids! I love a cold, refreshing smoothie for a little afternoon pick-me-up. This one is like sunshine in a glass, which we could all use now that April is here!  Dinner: Goat Cheese & Spinach Stuffed Chicken Breast with Caramelized Onions + Mushrooms Okay YUM this combo is one of my favs. Juicy chicken, creamy cheese, and sweet caramelized onions make for the best low carb, gluten & grain free dinner!  Dessert: Flourless Monster Cookies Round out your week with a healthier twist on a classic: these flourless monster cookies are packed with peanut butter, chocolate, M&M's and aaall the goods. Such an easy, tasty weeknight dessert!
