There's so much going on in the world and I've been sitting in front of my computer for hours, wondering what to say. And then I remembered that I have to run to take my son for a COVID test since he needs another surgery after his jaw surgery 10 days ago.
I'm afraid I'm just maxed out right now, and only have time and bandwidth for the food.
If you're feeling uncertain and unmoored, I'm with you. I hope you find community wherever you can, however you need it.
From the blog this past week, the rich vanilla custard in this gf banana cream pie slices cleanly and melts in your mouth.
Make it with a bake or no-bake gf graham cracker crust, or even no crust at all!
Then, our easy classic gf cheesecake, made simply with cream cheese, sugar, and eggs.
If you don't want to turn on the oven, you can even make it quickly and easily in an instant pot!

This gluten free banana cream pie is really all about the filling. And not all custard fillings are created equally well.
Smooth, creamy, and packed with vanilla flavor, this pie filling is unique because, once it sets, you can slice it really cleanly, even when it's been sitting out for a bit.
But be careful with those banana slices, and only add them soon before you're ready to serve your pie. No matter what they may say, there's no trick to keeping sliced bananas from aging quickly!

This classic gluten free cheesecake is technically a "plain" cheesecake, but the taste and texture make it anything but plain. It's smooth and silky, and each bite tastes light and creamy.
It's just rich enough and sweet without being overwhelming, and you can dial up the vanilla flavor as much (or as little as you like).
I normally use my instant pot for making perfect steamed potatoes and dried beans (no soaking!), but it also makes a killer cheesecake, especially when the weather is hot!
