This refreshing and creamy nice cream is made with surprise, CAULIFLOWER! And it still tastes amazing. When it is boiling hot outside, all I want after running/working out is something cold and refreshing. This nice cream hits the spot; healthy, creamy, protein-rich, and cold! This nice cream is easy to whip up and is best when eaten promptly. So if you get hit with an ice cream craving after being in the bright sun, make this healthy version.
Bananas sweeten this nice cream, cauliflower adds nutrients and creaminess, and the strawberries create a fresh flavor.

Ingredients:
6 large frozen bananas (chopped into chunks)
½ cup evaporated milk or whole milk
¼ cup whole milk
1/2 cup (heaping) frozen cauliflower chunks
½ cup (heaping) frozen strawberries
¼ cup vanilla whey protein powder
1 teaspoon vanilla extract
1 tablespoon maple syrup
Instructions:
In a powerful food processor, blitz the bananas, cauliflower, and strawberries together until thoroughly chopped up. Add in the remaining ingredients and blend until smooth. You will need to stop the food processer to scrape down the sides every so often so everything gets fully incorporated. Warning: be careful when adding in the milk; if you didn't blend the frozen bananas, cauliflower, and strawberries enough, the milk could splatter out of the food processor lid, so keep a dish rag handy. Using a spatula, transfer the nice cream to a freezer-safe container. Pop the nice cream in your freezer for 60 minutes for a firmer, more scoopable nice cream texture, or do as we do and enjoy promptly. Leftovers can be stored (covered) in the freezer for two weeks; just let it thaw for 10 min before digging in.
Recipe Notes:
~This recipe can be made in a high speed/ powerful blender instead of a food processor.
~This nice cream tastes lovely in a ice cream cone, I know from experience.
~Always shut off your blender/food processer when stirring or transferring nice cream. (Please use common sense and don't chop off your fingers!)
~For a bolder strawberry flavor swirl/top with homemade strawberry sauce. Also from past experience!
