Easy Pineapple Upside-Down Cake
Brown sugar, pineapple, maraschino cherries and yellow cake are the best summer combination in this easy pineapple upside-down cake. No one will guess that it's made using a yellow cake mix!
I don't know why it didn't occur to me before: use my favorite doctored cake mix recipe to make one of the summer's best cakes. That's right, pineapple upside-down cake!
If there's one thing I can count on with summer, it's tons of impromptu cookouts, play dates, pool parties...and I don't do "spontaneous" very well. But what I can do is keep all of the ingredients for this simple pineapple upside-down cake on hand so I can throw it together at a moment's notice. 10 minutes to assemble and it's in the oven, ready to whichever unexpected guests make an appearance this time!

Assembling the cake starts with melting butter in the pan while the oven is preheating. We use sliced canned pineapple for the topping and save some of the pineapple juice to add to the cake – can't pass up a chance to add more flavor!
After mixing up the cake mix, the cake goes in the oven and is turned out onto a platter as soon as it is baked.
