Weeknight menu plan and new recipes!

Kofta, Chicken and Succotash, Oh My!

It's been busy around here this month. I have shared MORE NEW RECIPES than usual. I want to quickly highlight them here so you don't miss them! 

  • This 15 Minute Blackened Cod is peppy, lean and made with only a couple key ingredients. It is so easy to make you will not want to pass it up.
  • Pair the cod with this Corn Succotash Recipe made with extra veggies, edamame for added nutrition and fresh oregano.
  • I guess I was on kind of an oregano kick because I also added it to these Greek Chicken Thighs too. :) 
  • This week I published these Grilled Ground Turkey Kofta Kebabs which are much leaner than lamb or beef but still spiced and grilled to perfection! 
  • I finally shared my Classic Healthy Ranch Dressing after all these years and dozens of salad dressings. It's about time and even though it is low in calories it totally tastes creamy and tangy.
  • If you still have strawberries this season, don't forget about this Strawberry Coulis and this Strawberry Peanut Butter Smoothie
  • If you love a big salad, like me, then this Cobb Salad will have to go on your list. It is big, bold and totally satisfying but is still healthier and lower in fat and calories than a traditional Cobb.

It is one of my favorite ways to prepare zuchhini and you'll return to it over and over again this summer. I love the sauteed sweet corn topping and fresh dill. THURSDAY: You do not have to be on a low carb diet to love these 20 Minute Mexican Stuffed Peppers. They are so fast and flavorful and can be paired with our new Succotash recipe or a simple Garden Salad. The key to getting them done in less than a half hour is steaming the peppers first in the microwave while you make the filling. FRIDAY: Make things easy on yourself and plan on this Lacinato Kale Caesar for Friday night. You can top it off with rotisserie or grilled chicken for a heartier meal. It is made with a simple egg-free dressing and tossed with homemade (or store-bought) croutons and grated cheese!
