Hello Friends! As I write this, I'm staring at a monstrous zucchini plant in our garden ready to dominate everything in its path. The variety, “Bianco di Sicilia” is new to me: it bears small, pale green squash (as opposed to the darker green variety) and according to the tag's description, “the taste and texture is really nice.” Needless to say, interesting zucchini recipes are always on my radar. "Zucchini slice" a uniquely Australian recipe, is a standout favorite in our house. The texture is so light and fluffy, you'll have it on repeat all summer long!
