Chocolate Chia Pudding

Nutritious and delicious is my love language when it comes to food, and this divinely creamy Chocolate Chia Pudding has my heart!
With 6 ingredients total –coconut milk, cocoa powder, vanilla stevia, chia seeds, water, and a pinch of salt this simple chocolaty pudding can be made in just a couple of minutes.
Chia seeds and cacao powder blend flawlessly for a wholesome antioxidant-rich treat. Cacao is not only aromatic in flavor, it has a high concentration of flavanols, known to reduce inflammation. Chia seeds, yet another superfood, are easy to digest and high in fiber, magnesium, iron, and omega-3 fats.
Since I was diagnosed with celiac disease in the late 1990s, I've been diligent about the food I use to fuel my body so that I can keep my gut healthy. Eating enough fiber is a big part of that. Whether it's eating soaked and pressure-cooked beans or making this luscious chia pudding, I am always working to build up my fiber intake.
Chia seeds have been incredibly easy to add to my diet! I started eating them over a decade ago because they're full of healthy insoluble fiber. This helps normalize gut motility, improves the body's response to insulin, and also lowers blood pressure.

I'm often asked, "Is dark chocolate healthy?" Yes, thankfully!
Dark chocolate is made of cacao, the unprocessed version of cocoa, and one of the most antioxidant-rich foods on the planet! Cacao is an abundant natural source of polyphenols and flavanols. These potent antioxidants combat oxidative stress in the body and have significant anti-inflammatory properties.
When consuming chocolate, I eat dark chocolate because it contains more cacao and less sugar than its milk chocolate and semi-sweet counterparts. I use anywhere from 70% to 100% dark chocolate in my recipes. The higher the percentage of cacao, the better!
My favorite keto diet trick for immediate sweetness satisfaction is a nibble of a healthy dark chocolate bar.
