Grilled Veggies and Weeknight Dinners

Get Those Veggies On The Grill!

In case you haven't noticed I am kinda obsessed with grilling. Lately, I have been sharing a lot of grilled veggies and I thought this weekend would be a good time to point a few favorites out!

  • Garlic Herb Marinated Grilled Mushroom Kebabs: These are my newest addition to the blog this week. They are low cal and low carb, and 100% savory and meaty.
  • Easy Grilled Onions with Balsamic: This is the best way to grill up sweet sliced onions without losing a single round. I've seasoned them with thyme for a simple side or addition to a burger or steak. 
  • Grilled Broccoli in Foil Packets: Early this summer I tackled figuring out how to grill broccoli and let me tell you, this method I came up with is perfection! After grilling them in foil the broccoli is seasoned with rice vinegar and sesame for a light and low cal side. You're going to love how they get just the right amount of charring without burning- and they're tender!
  • Grilled Carrots with Lemon Harissa Sauce: Readers have been loving this grilled carrot recipe this summer. You can keep the seasoning basic, or add on my lemon harissa sauce and mint for a pop of flavor. 
  • Simple Grilled Zucchini: If you're still rolling in zucchini, then slice it up and slap it on the grill. It's an all-time favorite veggie to grill. 
  • Grilled Asparagus: If you've struggled to get the perfect texture (not soggy) when grilling asparagus, then you'll find my tips super helpful. 
  • Grilled Potatoes with Maple Mustard Sauce: Yes, you can grill potatoes, and they are a game changer. I love the way these go with grilled pork chops or chicken.

THURSDAY: This 20 minute Turkey and Pepper sauté is Paleo, gluten-free, whole 30 and low-carb, so pretty much everyone can enjoy it! It's made with ultra lean turkey tenderloin filets, sweet bell peppers and onion with herbs and fire roasted tomatoes. FRIDAY: I can guarantee you will not be disappointed when you try this Grilled Tomato Herb Flank Steak.
