Last-Minute Appetizers and Drinks

If you are looking for a couple of last-minute ideas for appetizers to share with friends this holiday weekend, I have a couple of my favorites here for you. And a festive cocktail or three to mention.

MONDAY: This Maple Chipotle Peach Barbecue Sauce is sweet, tangy, and spicy. It has it all! We had it on grilled drumsticks and it was absolutely delish! To do so, grill the chicken and then in the last four minutes brush liberally with the peach barbecue sauce. Then turn the chicken to allow the grill to sear and caramelize the sauce. TUESDAY: Lighten up on Tuesday with these low-carb spiralized zucchini noodles with pesto. It is a no-cook vegetarian meal to start off the shortened work week! The pesto adds so much flavor, yet the garden fresh noodles and tomatoes are super light. And the best part is you don't even have to turn on the stove! WEDNESDAY: It only takes 30 minutes total to cook and assemble these rainbow hued Chicken Quinoa Bowls. They're drizzled with home-made peanut dressing which jazzes up the flavors of the bowls a ton and is quite frankly so delicious you may just want to drink it! GET THE RECIPE HERE...
THURSDAY: Some words that come to mind to describe these easy Steak Fajitas are "amazing" "delicious" and "scrumptious!" And that's just a few. They also happen to be fast. [They're ready in 35 minutes flat!] Not to mention the fact that they are so flavorful, thanks to a simple spice blend that seasons both the beef and the sauteed peppers and onions. FRIDAY: This Kale Salad with Blueberries, Manchego and Pumpkin Seed Clusters is the perfect blend of juicy fresh berries, salty cheese, spicy seed clusters all tossed with kale and a delicious lemon vinaigrette dressing.
