Refreshing Mango Tapioca Pudding (Mango Sago)

Summer is under way and as usual, it's scorching hot here in Sacramento. That's why I'm working on chilled dessert and cold noodle recipes that we can all enjoy on a hot summer's day. 

Lately, I've been cooking a lot of tapioca pudding for dinner gatherings with my friends and family. It's such a refreshing thing to serve for dessert and it's a great palette cleanser. After making some tweaks, I finally posted a recipe for the mango tapioca pudding on my blog. My husband loves it and can't stop eating it! I like serving the mango tapioca pudding with fresh mango chunks and sliced strawberries, but you can replace the strawberries with any fruits you have on hand. Hope you give it a try soon!

This mango tapioca pudding (aka mango sago) is a refreshing summer dessert made with easy-to-find ingredients. This serves 4 to 5 but can be easily doubled to serve a larger party.
