Gf lemon cookies | gf crêpes

I just got back from taking my youngest to see one of the colleges she's most seriously considering, and I'm beat! I'm just popping in to share a few things from the blog...

There are 22 days until spring, so it's time to talk about the simplest recipe for tender gluten free lemon cookies that literally melt in your mouth. Make them as drop cookies, or cutout cookies. They'll hold any shape you like!

Then, in the college town, we went to a restaurant that served crêpes, but not GF. So today I'm making gluten free crêpes because, well, I hate being left out! Make them sweet or savory, and have them for breakfast, lunch, dinner, or dinner!

These light and tender cookies really do melt in your mouth. They're like a buttery, lemon-packed cross between shortbread and sugar cookies.

Make them as simple drop cookies, or roll out the dough and cut it out in rounds. They'll hold any shape you can dream of—even without chilling the dough!

With or without a simple lemon icing, they're just sweet and tart enough. Or you can swap out the lemon 🍋 for lime or even orange!

With the right recipe (this one!) and the right ingredients (so simple!), you'll see how simple it is to make these light and delicate French-style pancakes that are never, ever fragile.

Wrap them around some savory fillings like beans and cheese, chicken, or fish for a quick and easy dinner. Or make a fancy-looking dessert with some berries and whipped cream, or a drizzle of Nutella.

Making a stack of gf crepes might just be the quickest and easiest way to turn an ordinary meal into something extraordinary!
