Way-too-easy cinnamon scrolls


We wanted to give you a little taste of what's inside the ebook. I have made a batch today and they are absolutely scrumptious. Pop some in the oven and enjoy for afternoon tea - leftovers (ha!) go in the baking box of course. Enjoy!

Way-too-easy cinnamon scrolls
Makes: about 16
Freezable, Egg Free

Ingredients

Dough
1 2/3 cups self-raising flour, plus extra for dusting
1 cup plain Greek-style yoghurt

Filling
1/4 cup + 1 tsp (for glaze) butter, melted
1/3 cup brown sugar
2 tsp cinnamon
2 tbsp sultanas

Glaze
1/4 cup icing sugar
½ tsp vanilla
1 tsp melted butter
1-2 tsp hot water

Method
  1. Preheat the oven to 180°C (160°C fan-forced) and line a baking tray with baking paper.
  2. Place the flour and yoghurt in a large bowl and mix until just combined. Gently knead on a floured surface until the mixture forms a dough. If your dough is too sticky, add another tablespoon of flour. Roll into a ball and set aside for 5-10 minutes. In the meantime, combine the filling ingredients in a bowl.
  3. Roll out the dough on a lightly floured surface to a rectangle about 1cm thick. Spread the filling over the dough, leaving a small strip on the long edge.
  4. Tightly roll up the dough, starting at the long edge that is covered with topping, to form a log. The edge that is not covered in topping will seal the scrolls. Cut the log into 2-3cm thick slices and place on the lined tray, leaving a space between each.
  5. Bake the scrolls for 20 minutes or until the dough is light golden and cooked through. Remove from the oven and set aside to cool slightly.
  6. Prepare the glaze by combining all the ingredients and drizzle over the warm scrolls.
Storage: Keep scrolls in an airtight container in the fridge for up to 2 days. Alternatively, flash freeze and store in an airtight container or bag in the freezer for up to one month. To freeze for up to 2 months, wrap each scroll in plastic film and place in a freezer bag.

Allergies/Intolerances: Gluten/wheat: use gluten-free self-raising flour. Dairy: omit the butter for coconut oil and use plain coconut yoghurt or try a traditional dough recipe.
