Gf coffee cake | blueberry scones

Spring is finally in the air, in addition to being on the calendar! I always have mixed feelings about the change of seasons from more-clothing to less-clothing. But it does seem pretty hopeful to see longer days and bright sunshine...

I hope you're having a lovely weekend, and that you're able to enjoy some mild weather wherever you are. Here are some details about the blog from last week...

First, a sour cream gf coffee cake with that classic rich, tender golden cake, topped with that classic nubby, sweet streusel crumb topping.

The secrets to the best homemade coffee cake are plenty of sour cream in the batter—and extra crumbles on top!

Then, we made gf blueberry scones that are perfect for when you want a sweet (but not too sweet) treat.

They're tender and flaky inside, with a lightly crisp top. And bursting with berries!

The crumb of this delicious cake is dense, and still incredibly tender and moist. It's really a golden ☀️ cake, not a vanilla cake.

The sour cream makes the most tender crumb. It adds a very slight tangy flavor that cuts through the sweetness of baked goods, and tenderizes absolutely everything.

The best scones are buttery, moist, and pleasantly crumbly—but never fragile. The crumb is tender but firm, not squishy, like a muffin or other cake.

Since blueberries are in season, this is the perfect time to use them. But you can make these buttery pastries any time with frozen berries.

Make the dough ahead of time, shape it, and keep it in the freezer, and bake right from frozen. Or make them fresh and watch them disappear!
