Happy April 1st! To celebrate the arrival of the new month, I'm sharing some springy recipes this week, including the springiest dessert I know - it is pure sunshine!

Your Weekly Menu
Monday: Beef and Veggie Enchilada Skillet. Prep/chop the veggies and make the enchilada sauce this weekend to get this dinner sizzling even faster. Leftovers freeze beautifully. No veggie side dish needed — this recipe is already packed with them.
Tuesday: Lemon Pepper Chicken. Pound out your chicken and make the artichoke salsa ahead of time, and this dish will come together in 15 minutes tops! I like to broil asparagus tossed with extra virgin olive oil and garlic salt as a side.
Wednesday: Sheet Pan Mediterranean Shrimp & Vegetables. Speaking of 15 minute meals — here's another one that cooks in exactly that! Prep everything on the weekend so you can toss onto a sheet pan then roast. Serve with cooked rice or cauliflower rice as a side.
Thursday: Easy Chicken & Rice Soup. I like to chop all the veggies (use store-bought, pre-shredded carrot so you don't have to chop,) and dice up the chicken — either raw or rotisserie — so this soup comes together in a snap. Serve with Gluten Free Focaccia.
Friday: Cheesy Gnocchi Florentine. What I love about this meal is that it tastes SO decadent, but it's also full of vegetables. Win/win! No prep work needed - this dish is inherently quick and easy.
MONDAY Love enchiladas but not the rolling? Toss all the ingredients in a skillet then warm through. SO EASY.

WEDNESDAY Say hello to your new favorite, 15 minute dinner. YES, it cooks in just 15 minutes!

THURSDAY This is my go-to, easy, family friendly soup. My kids and I adore it.
