Happy (nearly) May! Does your neighborhood hand out May Day baskets? Ours does but I was out of town last week and don't know if I'll have a chance to get my act together.

In the meantime, I've planned a fresh, springy, and zingy (see Friday) meal plan for the upcoming week. It's going to be a delicious one!

Your Weekly Menu
Monday: Crock Pot Chicken Tortilla Soup. Add all the ingredients into the crock pot on Sunday then slow cook on Monday. Tip: double the recipe then freeze half for another time. This soup is all about the toppings, so set out a toppings bar and let everyone customize to their liking.
Tuesday: Oven Baked Burgers. A lot of readers have made these burgers slider size, which I love for little hands! Whether full size or mini, mix up the burger patties on the weekend then refrigerate on the baking sheet so you can slide it right into the oven. Roast your favorite vegetable in a sheet pan underneath.
Wednesday: Cauliflower Fried Rice. This is my favorite "freezer clean out meal" - I add any and all frozen veggies I have on hand! If you don't think the whole family will enjoy an all-veggie supper, cut half or 3/4 of the cauliflower rice with cooked white rice.
Thursday: Southwestern Chopped Salad. Feel free to add diced grilled chicken or shrimp (YUM) on top of this salad to pump up the protein, though it's plenty filling on its own.
Friday: Thai Sticky Chicken Fingers. Homemade chicken fingers where the breading stays on the chicken? It's not a myth! These chicken fingers are a smash hit with kids and adults alike. Serve with whatever veggie you've got on hand, french fries, or a fresh fruit salad.
MONDAY This soup is all about the toppings, while the broth is full of deep, satisfying flavor.
