| You can use a range of veggies to add colour, crunch and depth to your salad - try tomatoes, cucumbers, carrots, spring onions, peppers, radishes, fennel, and even tiny florets of raw cauliflower, broccoli, or mange tout peas. Next, add some unexpected toppings like crunchy nuts or seeds, dried fruits like raisins or cranberries, halved grapes or juicy pomegranate seeds. These ingredients will give your salad a pop of colour as well as tasting great. Finally, don't forget the dressing! This is often the final touch that will tie everything together. Use quality olive oil, balsamic or lemon juice, spices, garlic, tahini... Taste and adjust till you're sure that your dressing will take your salad from good to gourmet.
