Hey e,
Once you've learned how to bake gluten-free bread with yeast, you'll be ready to choose your first bread recipe and get started with confidence. Follow me as we deconstruct the science of gluten-free baking so you can make the best gluten-free bread! Check out my top rules for baking gluten-free bread below:
Rule 1: Don't Stray from Tried and True
Don't stray from tried and true gluten-free bread recipes. Try to avoid making any substitutions when attempting a gluten-free bread recipe for the first time, especially if it's unfamiliar to you. If your chosen recipe requires substitutions for it to work for you, it's better to choose another one. While some substitutions may work, many won't. The easiest gluten-free bread recipe to start with is the white gluten-free bread. It's a super simple recipe, and there's a detailed video that allows you to watch over my shoulder as I make the bread.
Rule 2: Measure Ingredients by Weight
Measure your dry ingredients by weight and not volume. Use grams or pounds instead of cups for accurate proportions, and be sure to invest in a cheap and easy-to-use digital scale for precise baking. Each cup of all-purpose gluten-free flour weighs 140 grams in my recipes. Ignore volume measurements, as they are prone to human error and imprecision. Focus solely on the weight of each ingredient for better results, and don't worry about how anyone else measures 1 cup. The recipe's weight measurements are all that matters.
Rule 3: Thoroughly Blend All Ingredients
Thoroughly blend all ingredients for gluten-free bread dough. Use a stand mixer to mix vigorously until smooth. Avoid hand mixers with balloon whisk attachments as they won't work the dough properly. Over-mixing is not a concern since there's no gluten to overwork. If you don't have the right mixing appliance, try my recipe for gluten free artisan bread that's mixed by hand in one bowl. .
