| In these hot, sticky months, cake too often gets overlooked. It gets passed over for obvious summer desserts like ice cream, no-bake treats, and fruit pie. And while those sweets deserve their moment in the sun, cake is making a comeback this summer. With a roster of recipes fresh from the test kitchen, these elegant yet unfussy cakes are worth turning on your oven this summer. Take one of our newest recipes, Whipped Cream Dream Cake. It's a tender-crumbed cake with a cocoa ripple running through the center that uses a summer staple — whipped cream — as the base. The topping is a Samoas-inspired combination of brown sugar, coconut, and butter. Serve slices with more whipped cream on the side, because summer. If you're loving the whipped cream vibes, our new Earl Grey Cake with Fresh Raspberry Whipped Cream (above) is for you. The secret ingredients include cake flour for tenderness and buttermilk for tang, but the raspberry whip is the real star of the show. The cream is streaked pink and generously piled on top of the cake. (Plus, this recipe comes to us from Cake Life Bake Shop, a bakery that's made Beyoncé's birthday cake, if you need another reason to bake it.) Two other cake recipes that are ideal for summer gatherings are our Lemon Ricotta Cake and Citrus-Upside Down Cake. The ricotta cake is surprisingly made with '00' Pizza Flour, which turns out to be just what this fine-grained cake needed to achieve its light-yet-sturdy texture. The upside-down cake is a downright stunner that's equally as aromatic as it is beautiful, thanks to orange blossom water. (It'll make your whole kitchen smell like a sun-soaked orange grove.) Oh! Don't forget: With blueberry season right around the corner, you'll want to keep this blueberry-packed loaf cake recipe handy. |
