When it comes to breakfast, I'm 100% an egg person. Fried eggs, scrambled eggs, boiled eggs, poached eggs, eggs in omelets, eggs in quiches, and eggs in frittatas. I love eggs in pretty much any and every way possible.
And now I sound like Dr. Seuss. To be honest, I'm sure I'd be on board with green eggs and ham too.
Today I'm sharing a recipe for a crustless quiche. The recipe calls for caramelized onions, sun dried tomatoes, spinach, and a mix of two types of cheese. Honestly, it's amazingly delicious. However, as many of our recipes are, this one is very adaptable.
