"Cold soups are great for the frugal family in our time. This is easy to make and it keeps for a few days in the refrigerator. Your kids, and friends, will be surprised at how they enjoy cold soup. Do not serve this to your children when they come in after making snowmen."
COLD ZUCCHINI SOUP
Serves 4
1¾ lb green zucchini, trimmed and sliced
½ C peeled and chopped yellow onion
3 C chicken stock
¼ C yogurt
¼ C sour cream
½ tsp grated fresh ginger
Salt, white pepper (preferably freshly ground), to taste
Chopped scallions, "garnish"
Place sliced zucchini in 1 4-quart pot along with onion and stock, cover and simmer for 15 minutes. Drain, reserving stock. Purée zucchini and onion "but do not let them get too mushy." Return mixture to pot along with reserved stock, stir in yogurt and sour cream until smooth, add ginger, salt and white pepper, cover and refrigerate until "very cold, about 6 to 8 hours." Garnish with scallions.
