If you couldn't guess from last week's giant s'mores cookies, I am really trying to make the most of s'mores season before the summer ends.
These s'mores cupcakes have a graham cracker crust base, tender (and super easy) chocolate cake, and toasted marshmallow frosting on top. I use a doctored cake mix for the cake and make the marshmallow frosting from scratch – it's easier than you think, and really dresses up these simple but flavorful cupcakes.
Make these s'mores cupcakes as we say goodbye to summer and welcome in another school year. They're sure to be a hit!
