I had another whirlwind of a week prepping for the next cookbook photoshoot, getting over an illness (so brutal), and working on a couple more big projects. One of the BEST easy lunches! I like to serve the salad with crackers, too.  Snack: Salted Caramel Coconut Cashew Energy Bites These incredible energy bites are packed with healthy fats and protein and seriously taste like caramel. Keep them in the fridge or freezer for a great on-the-go snack.  Dinner: One Pan Tomato Basil Baked Orzo I shared this easy one pan baked orzo recipe last week and everyone fell in LOVE. For good reason! It makes the perfect meatless weeknight meal but is equally as delicious with your fav protein mixed right in.  Dessert: Pumpkin Oatmeal Chocolate Chip Cookies Throwback to 2017 when I perfected these chewy pumpkin oatmeal cookies with melted chocolate in every bite.
