I made this Carrot Cake without any nuts so those with nut allergies could indulge in this lovely treat. Rather than using my go-to ingredient, almond flour, I use coconut flour to change things up.
Ounce for ounce, coconut flour isn't as low carb as almond flour. But a little goes a long way; you can use a quarter of the amount of coconut flour that you would in an almond flour recipe, so coconut flour is our low carb winner.
