Are you having a hard time planning out your dinner menu? It's the end of the school year, and I know it gets hectic.
Even as a homeschooling family, things get hectic for us! There are lots of things I want to do before mid-June.
It can be easy to let your meals fall by the wayside, especially during busy seasons. I do better with the stresses of daily life when I have some kind of plan about what we are going to eat each day.
I thought I'd share a week's worth of dinner ideas with you. Maybe you'll find something to inspire you!
Mon: Chicken salad sandwiches, Vegan KFC copycat coleslaw
Tues: Slow cooker beef stew and cornmeal muffins
Wed: Roasted red pepper cheesy vegan quesadillas and Creamy avocado dip and chips
Thurs: Sheet pan chicken thighs with asparagus and perfect potatoes
Fri: Vegan lentil sloppy joes with red cabbage apple slaw and roasted sweet potatoes
Sat: Gluten free egg free meatloaf with dairy free mashed potatoes and gravy and garlicky roasted green beans
Sun: Pasta with creamy kale sauce and simple green salad with tangy dressing
Need dessert ideas? How about:
Easy vegan gluten free chocolate cake
Ice cream with homemade hot fudge
Everybody's favorite chocolate chip cookies
