| Hello Bakers, If gelatin is something that has always scared you, let me tell you two important tips that makes any gelatin based recipe foolproof. 1. Never overheat gelatin, beyond 200 degrees F its ability to set decreases. So its best to microwave the bloomed gelatin for 5-8 seconds interval till just melted. 2. Incorrect blooming, if you sprinkle gelatin on water as most recipes called for , it sometimes clumps up irreversibly. Always whisk it lightly while sprinkling it over water for uniform bloom.
