Happy Saturday, friends!
I'm in St. Louis for the weekend. It's a long overdue getaway with a dear, dear friend I've known since preschool. She makes me laugh more than anyone else, so it will great to play tourist and catch up. The last time I was there was on a college road trip....yes, it's been a few years!
SEASONAL FAVORITES - Here are some of the recipes I shared on social media this week.
Strawberry Cheesecake Trifle- I made this beautiful trifle for my dinner club years ago. It's perfect for dessert this month now that fresh local berries are available.
Butterfinger Cookies - I didn't know how much I loved Butterfingers until I chopped them up and put them into buttery cookie dough. Great for snacking, but I have to hide them in my freezer so I don't eat too many.
Fresh Strawberry Sauce - Head to your farmers' market and pick up some beautiful local strawberries to make this simple compote. I used it to top a lemon Bundt cake (on the blog tomorrow), but it's delicious on ice cream, cheesecake, angel food cake and a lot more!
ON THE BLOG THIS WEEK:
Lemon Chiffon Pie - Light, fluffy with loads of lemon flavor, this pie is perfect for summer dining.
Chicken with Artichokes and Sun-Dried Tomatoes - I was tired of our rotation of easy chicken recipes for dinner. I dug into my archives and made this Martha Stewart recipe. It's served over Israeli couscous---it's a good excuse to buy some if you haven't tried it. It's more like pasta than traditional couscous.
Upside-Down Rhubarb Baby Cakes - Do you have a rhubarb patch? Mine disappeared with a remodel, but I found some at the grocery store. I hadn't made these mini cakes in years and they were as yummy as I remembered!
Happy Baking,
XOXO, Liz, That Skinny Chick Can Bake
