I've been thinking about Spain lately because my friend and I are planning a trip there this spring. Of course I started dreaming about the delicious cuisine, and all the amazing food halls- where you can try little bits of everything, while sipping cava. 🥂
And it got me thinking... maybe you too would like a little visit to Spain as well?
Here are a few of our favorite Spanish Recipes on the blog if you need a little vacation right in your own kitchen.
Spanish Tortilla
This classic Spanish Tortilla (aka Tortilla de Patatas or Tortilla Espanola) is a lightened-up version made with roasted potatoes (not fried), caramelized onions, eggs, and olive oil that can be served for tapas, breakfast, lunch or dinner.
Vegetable Paella
This Vegetable Paella is simple and easy and full of authentic Spanish flavor, created from the Sofrito base. Today we are keeping it vegan with mushrooms, peas, and artichoke hearts. Vegan and Gluten-Free!
Spanish Seafood Stew
Spanish Seafood Stew with Garbanzo beans served over Saffron-Infused Basmati Rice. An incredibly flaovruful stew, perfect for chilly nights.
