| Most people think of February as the month of chocolate: truffles, candy bars, cakes, and more. But after all that chocolate, I'm craving something deeply savory and satisfying: cheesy bakes. Cheese adds salty, umami flavor to baked goods that may otherwise be bland. Just take our Cacio e Pepe Scones, which deliver all of the Parmesan and cracked black pepper flavor of the beloved pasta dish, but in scone form. If you want to experience ooey-gooey melty cheese, the recipe to make is Khachapuri (Georgian Cheese Bread), pictured above. Made with bread flour, these individual bread "boats" are filled with multiple kinds of cheese, herbs, and topped off with a sunny-side-up egg. An equally showstopping cheesy bread is the Savory Wool Roll. It starts with milk bread dough that's super tender (thanks to the tangzhong technique) and is filled with cream cheese and a secret ingredient: our newest cheese and herb blend. It adds over-the-top savory flavor with its unique combination of Parmesan, basil, oregano, garlic, onion, and buttermilk powder. Looking for something ultra-cheesy but also quick and easy? Try making your own Vermont Cheese Crackers (which contain an impressive amount of Better Cheddar Cheese Powder). Use the leftover cheese powder for topping popcorn, sprinkling over pasta, or for adding to an egg scramble. Perhaps the greatest use of cheese in baking is pizza.
