New recipe: Shypoke eggs

Shypoke eggs

You could be forgiven for thinking that shypoke eggs are what they claim to be. Indeed, the white outer ring circling an orange mound certainly gives the appearance of a fried egg. If you look closer, however, you'll notice that the rise comes from pickled jalapeƱos, and it's not egg protein but instead melted white and yellow cheeses that provide the color. Shypoke eggs, a style of nacho that are also a San Antonio Fiesta favorite, are not what they seem.

My family loves hard-boiled eggs, and here's my great-grandmother's potato salad, which true to form contains hard-boiled eggs. Though it also has plenty of juicy dill pickles and sharp red onion to give this cool and tangy dish plenty of punch.
