| A couple of months ago, I was grabbing drinks with some King Arthur colleagues when one of them threw a bag of bread on the table. This is not unusual — King Arthur employee-owners often leave work with bags of bread and/or pastries — so I didn't think much about it as I grabbed a hamburger bun and stuffed some of it into my mouth. "Good, right?" my colleague said. "Can you believe it's gluten-free?" In fact, I could not believe it was gluten-free and almost choked on the bun in shock. It was the first time I had tasted anything made with our new Gluten-Free Bread Flour and didn't know the magic it could deliver. These days I know what to expect: gluten-free bread that is almost indistinguishable from the glutinous stuff. Honestly. | |

| The bun I'd eaten that day was one of these golden Gluten-Free Hamburger Buns. Puffy and soft yet sturdy enough to hold anything from the grill, they are an exemplary model of a summertime bread. The sugar in the dough gives the bun sweetness and helps them turn golden brown; the egg wash gives them shine and allows the (optional) sesame seeds to adhere. A batch will please everybody at your next barbecue, whether they eat gluten or not.
